Job Description:
Tompkins Cortland Community College is implementing two new academic programs (Culinary Arts, Sustainable Farming and Food Systems), as well as facilities to provide opportunities for students to explore and be trained in a wide range of aspects of the food and wine industries, from Farm to Bistro. The Farm to Bistro project will create a working farm on property owned by the TC3 Foundation, and a culinary center in downtown Ithaca. The TC3 Culinary Center, known as Coltivare, will become the center of the College's new Culinary Arts degree program as well as provide learning experiences in the existing degree programs – Hotel and Restaurant Management and Wine Marketing.

The Director is responsible for the effective operation of Coltivare. Coltivare is a multi-faceted facility that supports the academic programs of Tompkins Cortland Community College by providing a culinary lab, classroom amphitheater, restaurant, wine tasting room, bar, and banquet/event space. The Director will have an integral role in the startup of Coltivare, scheduled to open in August 2014. Startup activities include establishing protocol and procedures in adherence with industry best practices, hiring and training staff, and general business planning. The Director ensures appropriate staffing and service with an emphasis on education, quality assurance, and best practices. Serves as an adjunct instructor for the College, teaching a minimum of one course section per semester.

Minimum Qualifications:
Bachelor’s Degree in Hospitality, Business Management or related field and 10 years of demonstrated experience in food and beverage management, general restaurant management, or special events. Butler’s Guild or Protocol training or equivalent and demonstrated ability to work with students and new employees with little to no experience in the industry.

Desired Qualifications:
Master’s Degree preferred. Experience in hospitality sales, financial management and marketing.

Expected Hiring Salary Range:
$70,000 - $80,000 – salary commensurate on experience
